Each week we take a request for a recipe from the menu of a metro Atlanta restaurant. This week, we learn to make the chicken curry from Masti.

The Chicken Curry at Masti is mind blowing and I thought I didn't like curry. The red sauce is smooth and pungent in a sneaky way, fulfilling in a comfort food manner. Even though I am not an adventurous cook I am willing to slave away in the kitchen to replicate this dish at home. Thank you. — Mary Ann Just, Lawrenceville

It would indeed take a lot of time in the kitchen to truly reproduce this dish. For example, the dish contains 1 cup of tomato gravy and 1/2 cup of onion gravy. When the kitchen makes tomato gravy, they start with 4 restaurant-size cans of tomato puree, 4 cans of crushed tomatoes and 4 cans of ketchup. The onion gravy begins with 100 pounds of onions simmered for two hours with tomato puree, cilantro, cumin and chili powder.

Since no home cook needs quite so much of these components, we’ve tried our best to approximate the recipe. This recipe is on the mild end of spicy. Feel free to taste the gravies and sauce and add more seasoning. You may also want more sauce, in which case increase the amount of onion and tomato gravy you make.

Kata Kat Masala is a spice mix of black pepper, black cardamom, ginger, mace, poppy seeds and another half dozen ingredients. You’ll find it at an Indian grocery. As long as you’re shopping, purchase Kashmiri chili powder and use that instead of cayenne. Cilantro powder can be found in the spice aisle of your grocery store.
