A "stylish alternative" to a steakhouse is set to open in Brookhaven in early 2018.

Arnette's Chop Shop will set up shop in the Apple Valley Brookhaven development at 2700 Apple Valley Road in a 6,000 square-foot space, according to Tomorrow's News Today.

The restaurant is a venture by Michel Arnette, Steve Rayman and Stephen Herman, business partners for Word of Mouth Restaurants, the umbrella group for Brookhaven favorites Vero Pizzeria , Haven and Valenza .

Herman will serve as executive chef, overseeing a menu including several different cuts of beef - large and small - as well as raw bar selections, and seasonally-driven composed dishes and salads.

"Not everyone wants to eat a 22-ounce cowboy ribeye," he said.

The kitchen will put to work both a steakhouse charbroiler that can be cranked up to 1,200 degrees and a woodburning hearth. "That is what, to me as a cook, I am really excited about," he said.

Arnette's will also feature a rooftop bar.

According to Herman, the group hopes to begin construction on the space in mid-September with an anticipated opening in January or February of next year.

Developed by Stream Realty Partners, Apple Valley Brookhaven is a paper plant-turned-adaptive-reuse project featuring more than 69,000 square-feet of office and restaurant space.
