Dish of the Week: Curried goat at Tassa Roti Shop

Eating at Tassa Roti Shop is like visiting an old friend. You receive warm greetings from the friendly waitstaff, and there's a help-yourself buffet. Order from the menu’s combination meals, and the illusion becomes complete, especially when a heaping plate of curried goat gets plunked down in front of you. This is the sort of food you serve to someone you care about very much.

That feeling applies even if, like me, you are unfamiliar with Trinidadian cuisine. Caribbean food is known for melding flavors from a variety of far-flung cultures, applying those flavors to island ingredients. In Trinidad and Tobago, you’ll find Indian spices and cooking techniques eddying with decidedly non-Indian specialties, like oxtails.

Tassa’s curried goat, served with warm, fresh roti (a flatbread), is aromatic and gently spicy. The meat is cooked on the bone, giving it excellent depth of flavor, but requiring the diner to pick out most morsels of goat. It’s a nice dish to share over unhurried conversation, because it takes a little work, and a single portion easily could feed two.
