Rice Grits!

Grits = corn. Right? Actually, no. Grits can be made from any grain. Over in Mississippi, Delta Blues Rice is producing white rice, brown rice and rice grits. Rice grits are the middlins, or broken bits of rice, that happen when rice is processed. The grits are almost iridescent, like little irregular seed pearls. And they're famous thanks to awards from Garden & Gun and Southern Living, but we like them because they're really delicious. You can make fancy Creamy Parmesan Grits or a risotto, but honestly, we liked them just plain. One cup of grits, two cups of water, a pinch of salt and a pat of butter makes for good eating. They're from a family farm in Ruleville, Mississippi, where four generations have grown cotton, soybeans, wheat, rice and catfish over the years. $5 for a 1-pound package. Pancakes!

Dad likes pancakes. Right? After all, who doesn't like pancakes? A big stack of pancakes. A plate shingled with pancakes. All of them drizzled with syrup and maybe served with little pats of butter. Southern Culture of Decatur makes pancake and waffle mixes in all sort of fun flavors like Bourbon Salted Pecan, Sweet Potato, Oatmeal Raisin Cookie, Birthday Cake and Chocolate Chip Cookie Dough. We tried the Meyer Lemon and Blueberry and made them traditional style with buttermilk, butter and eggs. Follow the directions and you'll be rewarded with 20 fluffy pancakes, each about four inches wide. But the directions also tell you how to make less than the full batch, and how to make them vegan with almond milk, oil and no eggs. Pancake mixes are easy – just add milk (regular, buttermilk or almond milk), your own fat (the oil or butter) and maybe some eggs. Everything else is done for you. Now you just have to heat up the griddle and decide on Dad's favorite syrup. $7.99 for a 10-ounce package.
