Lifting Noodles Ramen will open Jan. 16 next to Poké Burri, according to Seven Chan, who owns both concepts with partner Ken Yu.
The spot will offer traditional varieties of ramen including tonkatsu and spicy bowls, but will also serve up "weird variations" including fried ramen, which Chan said has been popular at tastings, as well as breakfast, bibimbap and barbecue bowls.
Poké Burri opened in Global Grub Collection in October 2016, and gained a following with their Instagrammable sushi bagels and burritos.
Q Trinh opened Global Grub Collective next to her pho and banh mi eatery We Suki Suki in 2015. In addition to Poké Burri, the mini food hall is also host to a revolving list of concepts including Zun Zun Cuban, Do-Si-Dosa South Indian Crepes and Fusion and YEN Kitchen Ghanaian and Geechee/Gullah Fused Vegetarian and Vegan.
