Profile

The Mexican version of Wrecking Bar’s base Siberius Maximus Russian Imperial Stout varies from year to year. But the addition smoked peppers, cinnamon bark, toasted cocoa nibs, and vanilla beans make it a coveted special release, drawing comparisons to the more famous Cigar City Hunahpu’s Imperial Stout.

In fact, Wrecking Bar founder Bob Sandage recently said, “I may be biased, but I think the batch we bottled this week is the best Mexican Siberius, yet, and is better than Hunahpu’s.” Whatever the case, look for a strong, dark, intense beer, with a picante jolt of chiles and cinnamon and aromas and flavors of cocoa, vanilla and espresso.

Pair with

Because of its combo of strong flavors, Mexican Siberius Maximus is best for after dinner sipping or pairing with dessert. Try it with dark chocolate, vanilla ice cream, or a Mexican Chocolate popsicle from King of Pops.
