Find flavors of the season in warming spirits like Cognac

For fall imbibing, look no further than cognac.

The spirit produced from distilling, aging and blending wine in France might seem like the sort of stuffy drink that your grandfather enjoys, but it’s actually rather accessible, especially during these cooler months. A type of brandy, it’s produced by twice-distilling white wines from the Cognac region of France — primarily from the Ugni Blanc grape varietal, otherwise known as Trebbiano — and it’s got warmth, intensity and many nuances of flavor.

One such cognac, D’USSÉ VSOP Cognac, is good for brandy beginnners who might otherwise find cognac to be too rich. (VSOP, or ‘very superior old pale,’ means that it has been aged for at least four years.) According to the brand, owned by Bacardi, the cognac contains notes of spices, dried fruits and honey, with a smooth finish that separates it from others on the market.

Becuase of that balanced finish, it’s tasty enough to drink on its own, but you’ll want to begin your foray into cognac with cocktails that have been designed with cognac’s complex flavors in mind.

Sidecar

1 1/2 oz. D’USSÉ VSOP Cognac

1 oz. triple sec

3/4 oz. freshly squeezed lemon juice

1/4 oz. sugar

Shake and strain all ingredients into a sugar-rimmed coupe glass. Garnish with a lemon peel.

The Storm

1 1/2 oz. D’USSÉ VSOP Cognac

1/2 oz. triple sec

1/2 oz. grenadine

1 oz. cranberry juice

1 oz. ginger beer (or ginger ale)

Build the first four ingredients with ice in a rocks glass and top with ginger beer. Garnish with an orange wheel.
